  • Shavuot Brunch Menu 5/18

    Recipes: Herb Challah Bread: Use your classic Challah recipe. After its first rise, shape into loaves, and place in a loaf pan, then allow to rise a second time. In a small bowl combine 1/3 cup olive oil, 1 tsp basil, 1 tsp oregano, 2 cloves minced garlic, salt, and pepper and mix. Brush this mixture over loaves, and bake at 375 for 35-40 min. Add a baking dish with water under the loaves to create steam for a nice crusty loaf. As soon as the bread is ready, brush with herb mixture a second time. Zaatar Labneh: Top Labneh with olive oil, zaatar, cumin and paprika. Spinach Pesto: Blend together: 2 cups baby spinach, 1 cup fresh basil, 1/4 cup toasted pine nuts, 3 garlic, 1 tsp salt, 1/2 tsp pepper, 1/2 tsp lemon zest, 1 tbsp lemon juice, 1/2 cup olive oil (drizzled in slowly at the end). *Parm Cheese optional Melon Arugula Salad: Arugula, chopped watermelon, chopped roasted beets, candied pecans, crumbled feta cheese. Garden Frittata: Layer in a 9" pan- first: 1 sliced yellow squash, 1 sliced zucchini and 1 chopped onion. second: layer 1 tomato sliced, 1 cup shredded mozarella cheese, 1/4 cup feta cheese. third: mix 4 eggs, 1 cup milk, 2 tbsp fresh chopped basil, 1 minced garlic, salt and pepper. Bake at 375 for 50 min. Red Lentil Sedanini From Trader Joes Tomatillo Avocado Salsa: Blend 4 tomatillos, 1 avocado, 1/2 cup cilantro, 1 jalapeno, 1 lime- juiced, salt and pepper. Nacho Black Beans: Blend 1 15 oz can black beans with 1 sauteed onion, 1 clove garlic, juice of 2 limes and salt + pepper. Thin with water if needed. Magical Cold Brew by Food52 @ 2/3 cup coarsely ground coffee, 3 cups water, 1 teaspoon cinnamon, 3 tablespoons dark brown sugar. Put ingredients in a jar, stir and refrigerate overnight, strain twice the following day. Serve the brew topped with milk, wjhip cream or ice cream! Sopapilla Cheesecake Bars In a 9x13 pan, layer the bottom with a sheet of puff pastry, next layer the cheesecake: 1 lb. cream cheese, 1/2 cup sour cream, 1 cup sugar, 2 tsp vanilla. layer 1 more sheet of puff pastry dough. Mix 1/3 cup sugar and 1 tsp cinnamon well, and sprinkle over the top. Melt 1/3 cup butter and sprinkle over the cinnamon sugar. Bake for 40 min. Let cool, refrigerate, and cut into bars. Homemade Granola: 2 cups old fashioned oats, ½ cup raw nuts, chopped, ¼ cup raw seeds sunflower or pumpkin seeds are great, ½ cup unsweetened dried fruit, chopped, 2-3 tablespoons maple syrup, 2 tablespoons oil, 1 large pinch fine sea salt. Mix well, and spread thinly on a baking sheet and bake at 300 for 10 min. Store in mason jar. #shavuot #shavuos #cheesecake

    "Life is a menu..." Magnificent colors on the menu this week, with a Moroccan finale. Do enjoy! 🍷 RoséNade - from My Domaine Ingredients: 1 oz. Absolut Citron 5 oz. Rosé 2 basil leaves, ripped 1 lemon wedge 1/2 oz. simple syrup 1 1/2 oz. club soda Directions: Muddle basil, lemon, and simple syrup in a cocktail shaker. Next, fill the shaker with ice, and add the vodka and wine. Stir, and pour unstrained into stemless wineglass. Finish it off by topping the cocktail with club soda, and garnish with lemon wedge. Pesto + Whole Wheat Challah 1.5 tbsp yeast (2 packagaes) 1/2 cup sugar 1 3/4 cup warm water 1/2 cup oil 4 eggs 2 tsp salt 1/3 cup prepared pesto (whip up some fresh basil, pine nuts, garlic, a little salt and olive oil) 4 - 4.5 cups whole wheat flour 4 cups flour Roasted Cauliflower + Turmeric Hummus Roast Cauliflower florets with olive oil, turmeric, cumin and salt on 400 for 20 min. Let cool and blend with 1 clove garlic, 2 tbsp tahini, and juice of 1 lemon. Garnish with herbs and pine nuts Roasted Rainbow Trout (served with) Tomato Orange Relish Corn Chip Salad with Jalapeno Cilantro Dressing inspired by @preventionpantry Salad: Spinach, red onion rings, cherry tomatoes, sliced cucumber, avocado cubes, corn tortilla chips Dressing: 1/2 cup olive oil, 1 bunch cilantro 2 tbsp lime juice, 1 tsp dijon mustard, 1 tbsp maple syrup, 2 garlic cloves, 1/2 to 1 jalapeno (seeds removed) , salt + pepper. Sous Vide London Broil Cover London Broil with apple cider vinegar, soy sauce and rub one side with spice rub or steak spice of choice. Seal and refrigerate overnight. Sous Vide it for 7 hours (or 6 - 8 hours) on 133 degrees F. Pat dry, and sear on both sides to get a nice char. Slice and Serve. Fennel Gratin From the Food Network Mag -May page 80. Halve, core and slice 3 fennel bulbs. Boil in salted water with a 1/2 lemon, for 15 min. Arranged in a buttered/oiled 2 quart baking dish. Sprinkle 1/4 cup panko and 1/4 cup parmesan or nutritional yeast, 3/4 tsp fennel seeds, 1/2 tsp salt, sprinkle pepper, dot with 3 tbsp butter. Broil until golden, about 3 min. Crush it well. Stir in 1 oz lime juice and 2 oz rum. Seder 2018 🍷🍷🍷🍷 Recipes: 🍷🍷Salad: Greens Julienned (fresh) beets Julienned (fresh) carrots 🍷Avo dressing: Blend Together (if you don't use oil, try water, but start slow) 1 Avocado 1/2 Red Onion 3/4 cup Olive Oil 1 Lemon juiced 1 Orange juiced Salt to taste 🍷Parsnip Crisps- Martha Stewart Thinly slice parsnips using a peeler Fry, without overcrowding for 30-60 seconds Drain on paper towel, and season with salt Lasts 4 days in a Ziplock bag. 🍷🍷Creamy Celery Root Salad #classic Esther Sperlin dish :) Peel celery root, and shred through food processor. Dress with a nice big spoonful of mayonnaise, fresh lemon juice, and salt. This lasts 4-5 days in the fridge. 🍷🍷Mango Lime Salmon Season salmon with salt then marinate each pound of salmon with 1/2 cup orange juice 1 tbsp lemon juice 2 tbsp white wine Bake at 350 for 15 min. 🍷When serving, top salmon with small cubes of mango, thinly sliced red onion, fresh lime juice and salt. 🍷🍷Onion Marmalade over Roast Beef 🍷Roast Beef: Slice onions and sweet potatoes to cover the bottom of the pan, Place roast on top, salt it, fat side UP, and pour wine of choice over roast. Bake on 350- 1/2 hour per pound. 🍷Onion Marmalade: (I will add this over the meat once plating) 2 large onions thinly sliced Saute in oil with 1/4 cup sugar Caramelize for 15 min. Add one cup dry red wine let the liquid evaporate, simmering for another 15 min. Season with salt 🍷🍷Courgettes and Sweet Potato Kugel (Rivkie Lazar) 5 zucchinis 3 onions 3 carrots 1 sweet potato Chop zucchinis, put the onions, carrots and sweet potato through food processor or slice uniformly Combine vegetables with 3/4 c oil 1 tbsp salt 4 eggs Mix well and bake in 2 - 9" round pan or individually, on 400 degrees for an hour and a half. 🍷🍷Marinated Eggplant 2 large eggplants, sliced Fry slices in large frying pan with oil, 4 min. per side. Drain oil as much as possible. Marinade: 6 tomatoes, peeled and chopped 1/4 cup water 1/4 cup lemon juice 1/4 cup sugar 1 chopped granny smith apple 1 tbsp salt Cook together, stirring often, on a low flame for 1 hour. Blend. Gently mix marinade with eggplant, let flavors come together min. 1 hour, best overnight. 🍷🍷Lemon Curd Trifles- page 214 in Perfect for Pesach by Naomi Nachman. 🍷🍷Almond Cookies 3 cups ground nuts 1 cup sugar 1 tsp salt 2 eggs Mix well and bake at 350. 🍷🍷Apple Compote Peel and cube apples Peel and cube pears Cook for 20 min. With a little water to cover the bottom of the pot, and an even sprinkle of sugar, let simmer and stir. Gently mash when finished.
