Shavuot Brunch Menu 5/18


Herb Challah Bread:

Use your classic Challah recipe. After its first rise, shape into loaves, and place in a loaf pan, then allow to rise a second time. In a small bowl combine 1/3 cup olive oil, 1 tsp basil, 1 tsp oregano, 2 cloves minced garlic, salt, and pepper and mix. Brush this mixture over loaves, and bake at 375 for 35-40 min. Add a baking dish with water under the loaves to create steam for a nice crusty loaf. As soon as the bread is ready, brush with herb mixture a second time.

Zaatar Labneh:

Top Labneh with olive oil, zaatar, cumin and paprika.

Spinach Pesto:

Blend together: 2 cups baby spinach, 1 cup fresh basil, 1/4 cup toasted pine nuts, 3 garlic, 1 tsp salt, 1/2 tsp pepper, 1/2 tsp lemon zest, 1 tbsp lemon juice, 1/2 cup olive oil (drizzled in slowly at the end). *Parm Cheese optional

Melon Arugula Salad:

Arugula, chopped watermelon, chopped roasted beets, candied pecans, crumbled feta cheese.

Garden Frittata:

Layer in a 9" pan-

first: 1 sliced yellow squash, 1 sliced zucchini and 1 chopped onion.

second: layer 1 tomato sliced, 1 cup shredded mozarella cheese, 1/4 cup feta cheese.

third: mix 4 eggs, 1 cup milk, 2 tbsp fresh chopped basil, 1 minced garlic, salt and pepper.

Bake at 375 for 50 min.

Red Lentil Sedanini

From Trader Joes

Tomatillo Avocado Salsa:

Blend 4 tomatillos, 1 avocado, 1/2 cup cilantro, 1 jalapeno, 1 lime- juiced, salt and pepper.


Black Beans:

Blend 1 15 oz can black beans with 1 sauteed onion, 1 clove garlic, juice of 2 limes and salt + pepper. Thin with water if needed.

Magical Cold Brew by Food52 @

2/3 cup coarsely ground coffee, 3 cups water, 1 teaspoon cinnamon, 3 tablespoons dark brown sugar.

Put ingredients in a jar, stir and refrigerate overnight, strain twice the following day.

Serve the brew topped with milk, wjhip cream or ice cream!

Sopapilla Cheesecake Bars

In a 9x13 pan, layer the bottom with a sheet of puff pastry, next layer the cheesecake: 1 lb. cream cheese, 1/2 cup sour cream, 1 cup sugar, 2 tsp vanilla. layer 1 more sheet of puff pastry dough. Mix 1/3 cup sugar and 1 tsp cinnamon well, and sprinkle over the top. Melt 1/3 cup butter and sprinkle over the cinnamon sugar. Bake for 40 min. Let cool, refrigerate, and cut into bars.

Homemade Granola:

2 cups old fashioned oats, ½ cup raw nuts, chopped, ¼ cup raw seeds sunflower or pumpkin seeds are great, ½ cup unsweetened dried fruit, chopped, 2-3 tablespoons maple syrup, 2 tablespoons oil, 1 large pinch fine sea salt. Mix well, and spread thinly on a baking sheet and bake at 300 for 10 min. Store in mason jar.
