Shabbat Dinner 6/28/2019
No need for major cocktails, just some well chilled rose, refreshing salads, and then we go heavy on a Friday night Shabbat Dafina! Shabbat Shalom!!!!
Chateau Josephine Rose
cardamom and orange zest challah
Add to your dough (a 2.5 lbs flour batch)
2 tsp orange zest
1/2 tsp cardamom
Spicy charred corn salad
4 fresh corn stalks, charred on a dry cast iron, then shaved down.
2 peppers, diced
2 avocados, diced
1 jalapeno, finely minced
1 handful chopped fresh cilantro
Dressing: whisk 1/4 cup olive oil, 1/4 cup fresh squeezed lime juice, garlic powder, salt and pepper.
Basil Miso Pesto
in food processor
2 bunches of fresh basil
1 cup packed baby spinach
1/2 cup salted cashews
2 tbsp miso
1 garlic clove
2 tsp lemon juice
1 tsp salt
1 tbsp nutritional yeast
2 tbsp olive oil
Poached Salmon Salad
Season salmon fillets with salt and pepper and simmer in a saucepan with 2 cups of dry or semi-dry white wine and cook for approx 10 minutes. Remove from wine and let cool.
In a salad bowl, set a layer of baby kale or mixed greens, sliced cucumber, cherry tomato halves and scallions. Flake cooked salmon over salad.
Dressing: 1/4 cup olive oil, 2 tbsp lemon juice, 2 tbsp fresh chopped dill, 1 garlic clove minced. Salt and pepper.
A sephardic stew dish
In a crockpot add your own unique combination 🙂 or follow something like this list:
eggs!!! approx 10
chickpeas (canned or dried+soaked for a few hours)
10 fresh garlic cloves, peeled
spices: salt, pepper, turmeric, cumin, paprika, allspice, cinnamon, turmeric.
Saute 1 red onion, 1 minced garlic and 1 bag of fresh spinach leaves until softened, let cool.
Whisk 3 eggs, 1/2 cup coconut milk or almond milk, and salt and pepper.
Mix with spinach mixture and pour into pie crust, bake at 350 degrees for 30 min.
Caraway roasted cabbage and potatoes
1 head green cabbage, cut down into wedges
1 lb. baby red potatoes, halved
Season with olive oil, salt and pepper and a tsp of caraway seeds. Toss and roast at 400 degrees for 40 minutes.
Oreo ice box cake
Layer in a square baking dish or loaf pan, a layer of oreo cookies, then whip cream repeating approx 3 times, and crumble oreos on the top. Freeze.
