Shabbat Menu 11/2/2018

Hello November! Pineapples are being sold in abundance at my grocery, and they are so sweet and delicious. Couldn't help but starting with a fresh pina colada, with a jalapeno twist, from an actual pineapple, not a tin can!!

Oh, and cholent on a Friday night? Who wrote the rules anyway?

🍸Jalapeno Pina Colada

Cut 1 pineapple into chunks, blend with 1 (13.5 oz) can coconut milk, 1/4 cup agave, 1/2 cup rum. Pour into glasses, add ice, 1 seeded jalapeno ring, and 1 pineapple chunk.

🥧🍞Pumpkin Pie + Pepita Challah - From Chaya Deitsch Sperlin

Add approximately 2 tbsp of pumpkin pie spice into your 2.5 lbs. dough. (multiply as needed)


1 1/2 cups oatmeal

3/4 cups pepitas -pumpkin seeds

1/2 cup brown sugar

1/4 cup flour

1 1/2 tsp pumpkin pie spice

1/4 cup oil

Combine dry ingredients, and slowly drizzle in oil, working it into a crumble.

🍥Leek + Cayenne Spread

1/4 cup olive oil

3 leeks, white and green part thinly sliced

3 cloves garlic, minced

1/4 tsp cayenne

1/2 tsp smoked paprika

1 tbsp of fresh chopped dill

Zest and juice of 1 lemon

salt and pepper

Saute the leek, garlic, cayenne and smoked paprika on low for 25-35 minutes until soft and browning. Remove from heat and add fresh dill, lemon, salt and pepper.

🍊Persimmon + Roasted Beet Salad

Arugula or endives

Beets -wrapped in foil, roasted at 425 degrees for 45 min, peel and cube

Persimmon -peeled and cut into wedges

Avocado -cubed


1/2 cup oil

1 tbsp balsamic vinegar

1 tbsp Dijon mustard

1 minced garlic clove

salt and pepper

Whisk together.

🍏Green apple + cucumber slaw

Thinly slice green apples, lots and lots of cucumbers, and 2 scallions.

Season with mayonnaise, apple cider vinegar, a drizzle of honey and salt + pepper to taste.

🐟Maple Grilled Salmon Steaks

Marinate salmon steaks in maple syrup, sesame oil, soy sauce, thin slices of fresh ginger, smashed garlic, for a minimum of 2 hours.

Reserve the marinade, heat up a grill pan, and cook salmon steaks for 6 minutes (approx) on each side.

Cook the marinade in small saucepan until slightly thickened, and serve over salmon steaks, garnish with scallions.

🍲Vegetarian Farro Cholent

Inspired by @chayadsperlin from chef @grant_achatz

Prepare Crock-Pot set to high, 6 hours cooking time.

Place inside:

1 cup farro grain, 1/4 cup olive oil, 1 cup tomato sauce, 3/4 cup water, 1 tbsp kosher salt, 1 tsp crushed red pepper, 5 cloves peeled garlic- kept whole, 1 lemon, juiced, 1 red pepper- sliced in rounds, 1 chopped onion, 1 chopped eggplant, 1 cup dried figs, 1 pint cherry tomatoes, top everything with 2 rosemary springs and a sprinkle of dry thyme.

Cover and cook for 4 hours. Gently stir, and add 2 zucchinis cut into chunks and cook for the 2 remaining hours.

🍗Jerusalem Spiced Whole Chicken

Pat whole chicken dry with paper towel, sprinkle it evenly with salt, olive oil and Jerusalem spice mix. Pour some more oil in a cast iron skillet, place chicken on it and bake at 425 degrees for about 55-60 minutes.

🍝Fall Zuchette Pasta

Cooked pasta with a variety of stir fried vegetables.

**MUST leave time to refrigerate the dough overnight.
