    🍂🍂Channeling our fall menus... so long summer, I'll miss you, but I know you'll be back (tomorrow, right?) ❤️A Southern Californian 🥃Maple bourbon old-fashioned Per cup 2 oz bourbon 2 tsp maple syrup 1 dash angostura bitters 2 tsp water 1 lemon peel Stir, add ice. 🍞Roasted zucchini and red onion challah slice 2 zucchinis and 1 red onion into rounds drizzle olive oil and salt and bake at 450 for 25 min. Add cooled veggies right into the challah dough, saving a few pieces to press into the tops of the braided loaf, and bake. 🥑Spinach avocado dip Blend: 2 cups spinach 1 avocado 1/2 cup non-dairy sour cream or mayonnaise 1 lime, juiced 2 garlic cloves 1 jalapeno, seeded 1 tsp onion powder 1 tsp salt, sprinkle pepper Refrigerate for 30 min before serving. 🍐Pepita and Asian pear slaw Easiest through the shredder blade of the food processor, or by hand 1 head green cabbage, thinly sliced 2 Asian pears, cut into matchsticks 1 small celery root, cut into matchsticks 1/2 cup toasted pepitas- pumpkin seeds Dressing: whisk together olive oil, lemon juice, dijon mustard, maple syrup, salt and pepper. 🥕Cilantro + Cumin Carrot Salad A Moroccan classic, that I love. >>>>> 2 lbs. carrots, peeled and boiled until tender (20 min approx) Slice carrots Toss carrots with 1/4 cup olive oil, 3 tbsp lemon juice, 1 tsp salt, 1 tsp cumin, 1 tsp coriander, 1 tsp paprika, a sprinkle of cayenne, 2 minced garlic cloves, a big handful of fresh cilantro, chopped. 🐟Herb Cod En Papillote Place cod fillet on a large rectangle of parchment paper, drizzle a little olive oil, salt, fresh parsley and chive sprigs, lemon slices. Cover cod with the parchment paper and seal the edges shut by folding them over. Bake at 450 for approx 10 minutes, when you see the parchment puff open, it's ready. 🍵Red Lentil Soup Super simple! Saute 4 diced carrots 4 celery stalks, chopped 1 large diced onion 2 tsp salt 2 tsp garam masala (optional) After 5 min, add 1 1/2 cups dried red lentils 8 cups water 2 bay leaves Simmer for about 20 minutes, add a freshly squeezed lemon and top with chopped parsley or a sprinkle of sumac. 🍋Delicata Squash stuffed with quinoa Slice delicata squash, remove seeds drizzle with olive oil, salt, pepper and maple syrup and bake for 25 min. at 350 or until starting to brown. Cook 1 cup quinoa to 2 cups water for 20 minutes, season with olive oil, lemon juice and salt, add craisins and pecans. Fill each squash ring with quinoa mixture. 💥Meatloaf and Mushroom Gravy moms recipe 🙂 1 lb. ground meat Blend the following mixture, and combine with meat 1 egg 1 medium onion 3 garlic cloves 1/2 potato salt and pepper Bake in a loaf pan at 400 for 1 hour or until well browned. Mushroom Gravy Saute 1 lb. sliced mushrooms in 2 tbsp oil Once liquid evaporates add 2 tbsp flour, and mix well. Add 1 cup water or stock and simmer until thick. Season with salt and pepper. Slice cooled meat, and serve with mushroom sauce. 🥧🍫Pumpkin Spice chocolate chip cake by Rivky Greenwald 3 cups flour 2 cups sugar 2 tsp baking powder 2 tsp baking soda 2 tsp pumpkin spice or cinnamon 1/2 tsp salt 4 eggs 16 oz can pumpkin puree 1 cup oil 1 cup chopped walnuts 6 oz chocolate chips Bake in a Bundt pan at 350 for 1 hour, dust with confectioners sugar before serving.

    Sat Night Party in the "Sukkah". Sukkot is a really fun holiday. We take the party outside into a temporary dwelling known as a Sukkah! Party Menu: Cocktails Etrog Gin Fizz 1.5 oz gin 1 oz fresh Meyer lemon juice (sweeter and less acidic than regular lemons) 1 oz agave club soda Shake all ingredients with ice, strain into an ice filled glass, and top with club soda. Sukka-Cumber Mojito 3 mint leaves 2 basil leaves 3 slices peeled seedless cucumber 4 oz rum 1 oz ginger simple syrup* juice of 1/2 lime club soda Muddle mint, basil and cucumber, add rum, simple syrup, and lime. Shake and strain. Top with club soda, and garnish with mint and cucumber slice. *Ginger simple syrup- in a saucepan, put 1 part water, 1 part sugar and a 2" piece of peeled fresh ginger, simmer together for 20 minutes and cool completely. Long Lulav Iced Tea 1.5 oz vodka 1 oz brewed tea, cooled splash of lemon juice 1/4 oz agave syrup lemon wheel Shake ingredients in cocktail shaker, and strain in ice filled glass, garnish with lemon wheel.     Now that Yom Kippur is behind us, and we are confident that we will have an amazing year, let's move on to next, SUKKOT! Hot or cold weather, Sukkot means soups, this time around, it's a wild rice + mushroom soup. This menu is in collaboration with an awesome sister of mine, Sarale Fradkin! 🍞Vanilla Crumb Challah 🍹Rum and Apple Cider Cocktail: 1/2 gallon apple cider, cinnamon, shot rum, ice Trio of Dips: Served in this: https://amzn.to/2xAOiCT 🍯>honey 🍍>Mango Chutney Sweet Mango Chutney In a large pan, saute 1 chopped onion until soft, add 2 minced garlic cloves, 1 tsp grated fresh ginger, saute for another minute. Add 2 large chopped mangoes, 1 tsp mustard powder, 2 tsp spicy brown mustard, 1/2 tsp chili powder, 1/4 tsp turmeric, 1/4 cup sugar, 1/4 cup vinegar, 1/4 cup water. Simmer for 15 minutes until thickens, stirring often so it does not burn. 🍅>Cherry tomato Confit 1 lb. cherry tomatoes, spread on a sheet pan in 1 layer. Season with 1/2 cup olive oil, add 3 fresh rosemary sprigs, 1 handful of torn fresh basil, 6 garlic cloves, salt and pepper. Bake at 225 degrees, uncovered, for 3 hours. Let cool completely, transfer to a bowl and add 1.5 tbsp red wine vinegar and some chopped fresh basil, taste and season with salt and pepper if needed. Plated 🥑Arugula with avocado basil creme 1 avocado 1/2 cup fresh basil leaves 1/4 cup lemon juice 2 tsp honey or maple syrup 2 tbsp olive oil 1 tsp salt Blend- and add 1/4 cup water to thin (add more depending on consistency) 🦈Salmon and Spinach Puff Cut puff pastry sheet into squares, cut salmon into small squares to fit on each puff pastry square. Spinach: Saute 1 onion, add 1 lb. frozen chopped spinach, 2 minced garlics and 1 tsp. salt. Cook for about 10 minutes, let cool, and squeeze out extra liquid. Spread a spoonful of the spinach mixture over salmon, seal puff dough (rectangle shape) over the salmon and spinach, brush with 1 beaten egg. Bake at 375 for 25-30 min. 🍄Wild Rice and Mushroom Soup Serves 8 Wild Rice Blend: https://amzn.to/2xpKOUg Cook 1 cup wild rice blend, according to package directions. In a large soup pot, saute 2 chopped onions in oil, add 3 cloves minced garlic. Add 1 lb. sliced assorted mushrooms (white, crimini, portobello, shiitake...) and cook stirring often for 15 minutes, Add 1/3 cup flour to form a roux. Add 6 cups stock or water and 1 tbsp salt and 1 tsp pepper. Bring to a boil and simmer for 15 minutes. To serve, place a big spoon of wild rice and ladle soup over it. 🥩Bbq Pulled Brisket- Cover brisket with bbq sauce, cover pan and cook for approx 6 hours. Pull the brisket. 🍚Green Beans with Dehydrated Onions Place fresh or frozen green beans on baking sheet, cover well with olive oil, salt and pepper and a generous amount of dehydrated onion slices. Bake at 400 degrees until green beans are shriveling and browning at the edges. 🥔Herb Roasted Fingerling Potatoes Spread potatoes on baking sheet, drizzle with olive oil, salt and pepper, add 3 sprigs fresh rosemary, 3 sprigs fresh thyme and bake at 450 for 25-30 minutes. Serve immediately. 🍆Caper Zaatar Tahini and Eggplant Tahini: 1/4 cup tahini 1/4 cup olive oil 3 tbsp lemon juice 1 tbsp rice vinegar 1 tbsp capers 2 garlic cloves 2 tsp zaatar 1 tsp salt Blend. Slowly add water, to desired consistency. Roast, grill or broil halved eggplants and drizzle caper zaatar tahini over eggplant. Garnish with capers and fresh parsley. 🍎🍏🍦Warm Apple Crisp and Ice Cream Peel, core and slice 7 apples, place in 9x13 baking pan. Mix 3/4 cup sugar, 1 tbsp flour, 1 tsp cinnamon and mix into sliced apples. Pour 1/2 cup water around the edges. Combine 1 cup oats, 1 cup flour, 1 cup brown sugar, 1/4 tsp baking powder, 1/4 tsp baking soda, 1/2 cup oil. Crumble over apple mixture and bake for 45 minutes at 350 degrees, uncovered. ****** MaMenu Sukkah Recommendations!   • Rosh Hashana Dinner Menu 5779-2018

    SHANA TOVAH!  Rosh Hashana 5779- 2018 MENU 🍎🍯 🥖🍞Cinnamon Apple Challah (topped with streusel) Cube 2 apples, cover sugar and cinnamon, let sit for 15 minutes, then add right into Challah dough, optional- to top challah's with sweet streusel. 🍹🍸Cocktail: Manischewitz Daiquiri 4 cups apple cider 1 cup lemon juice 1 cup red wine 1 cup Manischewitz 2 cups dark rum 3/4 cups simple syrup (equal parts water and sugar boiled together) Orange peels from 2 oranges Apple, orange or pear slices, for garnish Combine all of the ingredients in a bowl and let it meld overnight.Serve in glasses over ice, garnished with apple, orange or pear slices. Don't forget: *fish head *apples + honey 🍓Dip 1- Strawberry Relish Combine 1/2 cup brown sugar and 1 tbsp water in a saucepan, on medium heat for about 5 minutes. Add 1/4 cup vinegar and 1 finely chopped apple- bring to a boil.  Lower heat and add 1/2 tsp red pepper flakes, 1 tsp fresh minced ginger, 1 minced garlic, 1 tbsp finely chopped cilantro, sprinkle of salt, pepper and cinnamon.  Remove from heat, and blend entire mixture with 1 cup strawberries until smooth, then add an additional 1 cup of strawberries chopped, for texture. 🍓Dip 2- Sweet Mango Chutney In a large pan, saute 1 chopped onion until soft, add 2 minced garlic cloves, 1 tsp grated fresh ginger, saute for another minute. Add 2 large chopped mangoes, 1 tsp mustard powder, 2 tsp spicy brown mustard, 1/2 tsp chili powder, 1/4 tsp turmeric, 1/4 cup sugar, 1/4 cup vinegar, 1/4 cup water.  Simmer for 15 minutes until thickens, stirring often so it does not burn. 🥗Salad 1- Arugula and Pomegranate salad 🥗🍊Salad2- Leek + Orange Cabbage Salad Sliced red cabbage, orange chunks, finely chopped leek, fresh parsley. Dressing: 1/4 cup olive oil, 2 tbsp red wine vinegar, 2 tbsp lemon juice, 2 tbsp honey, 1 tsp dijon mustard, 1 minced garlic clove, salt and pepper. 🐟Fish- Candied bourbon salmon  2 lbs salmon fillet, skin on. Spread 2 tbsp olive oil on pan and place salmon on oil.  Season salmon well with salt, pepper, paprika and smoked paprika, and 1/2 cup of brown sugar. Lastly, drizzle 1/4 cup bourbon on and around salmon. Let marinate for 1 hour.  Bake at 450 degrees for 15-20 minutes depending on your salmon, keep a close eye on it. 🍲Dill + scallion matzo ball soup Matzo Ball mix - plus oil/ eggs needed  4 scallions, thinly sliced and sauteed for 30 seconds 1/4 cup fresh minced dill sprinkle of ginger powder Mix well and refrigerate, shape and cook in water or in soup. 🥩Date + Allspice Roast  @Pearl Yerushalmi- thank you!!! And @Ella 2 (2 1/2-pound) boneless beef chuck roasts, each about 7x4x2 inches 4 teaspoons sugar 3 tablespoons olive oil, divided 1 pound onions, thinly sliced 6 tablespoons red wine vinegar 1/2 teaspoon ground allspice 2 cups low-salt chicken broth 1 cup orange juice 1/2 cup tomato sauce 2 cups pitted dates Preheat oven to 350°F. Sprinkle roasts on each side with salt, pepper, and 1 teaspoon sugar. Heat 2 tablespoons oil in heavy wide ovenproof pot over medium-high heat. Add roasts. Cook until brown, about 8 minutes per side; transfer to plate.  Add 1 tablespoon oil and onions to pot. Sauté until dark brown, stirring often, about 10 minutes.  Mix in vinegar and allspice; boil until reduced to glaze, scraping up browned bits. Add broth, orange juice, and tomato sauce; bring to boil.  Return roasts and accumulated juices to pot. Scatter dates around roasts.  Cover pot; place in oven. Braise roasts 1 hour. Turn roasts over, cover, and braise until tender, about 1 hour. Tilt pot; spoon off fat from top of sauce. Cool uncovered 1 hour. Can be made 2 days ahead. Chill uncovered until cold; cover and keep chilled. Preheat oven to 350°F. Transfer roasts to board, scraping sauce into pot. Cut crosswise into 1/2-inch-thick slices; overlap slices in baking dish. Spoon sauce over. Cover; rewarm about 25 minutes. 🥕Carrots with Mint + Shallots Wash, and cut 8 carrots into 1/2" thick slices, cook in salted water for 5 min (+) until tender, drain.  Saute 2 large shallots for 2 min, add 2 minced garlics, then add carrots, 2 tbsp chopped fresh mint, salt + pepper. Cook for another few minutes until carrots are hot and crisp. (serves 4) 🍚Cauliflower with sweet onions + raisins Cut 1 head cauliflower into florets, boil in salted water for 5 min, drain.  Caramelize 1 sweet onion, chopped, then add 2 minced garlics, and 1/4 cup raisins, and 1/2 cup bread crumbs, cook for 2-3 minutes- until crumbs are toasted.  Add florets to mixture, and cook until well coated, season with fresh lemon juice, salt and pepper. 🍰dessert: Pavlova- one of these> >https://www.chabad.org/ >https://www.collive.com/ 🍯>Spiced Honey Cake (Mom's - it's the best)

    🍸White Peach Sangria A great and beautiful pitcher cocktail! 3 white peaches, cubed 1/4 cup sugar 1 tbsp lemon juice 3 sprigs Rosemary (or more) Stir to combine, and let sit for 20 minutes. Add 3 cups white wine, and 6 oz gin and refrigerate until cold. 🍞Wasabi Challah Loaf Add 2-4 tbsp Wasabi paste to your Challah dough liquids, plus mix a tsp of Wasabi with egg wash before baking. 🍮Cashew Basil and Olive Dip Blend in blender until very smooth, add a bit of water if needed: 1 9.5 oz jar green olives 1 cup raw cashews soaked in hot water for 10 min. 2 tbsp lemon juice 2 tbsp olive oil 2 tbsp water 1/4 cup fresh basil leaves 2 garlic cloves 🥗Minted Tomatoes 4 large tomatoes, chopped 8 scallions, chopped 2/3 cup chopped fresh mint olive oil and salt to taste. 🐟Mediterranean Spiced Cod 4 Cod Fillets 1/2 cup mayo 2 tbsp lemon juice 1 garlic clove 1 tsp fresh ginger 1/2 tsp ground coriander 1/2 tsp turmeric 1/2 tsp cumin 1/4 tsp paprika 1/8 tsp cayenne pinch of cinnamon salt Mix the mayo and all spices, spread on top and underneath the cod, let the flavors absorb into the fish for a minimum of 30 minutes. Bake at 450 for 12-15. 🍝Eggplant and Sun-dried Tomato Orecchiette Pasta >Sun-dried tomato: Blend 1 cup sun-dried tomato, 1/4 cup olive oil, 1 cup fresh basil, 3 cloves garlic, 1 tbsp nutritional yeast. >Cube 1 eggplant, season with salt and pepper and fry in oil until soft- about 8 minutes. Add 1 tsp of fresh or dry oregano to the eggplant and stir for another minute, add sun-dried tomato mixture and heat for another 2 minutes. >Cook orecchiette pasta (Trader Joe's has with their artisan pastas) and combine with eggplant and sun-dried tomato mixture. 🍜Vegetarian Thai Curry (serves 4) >Heat 1 tbsp of olive oil in a pot or deep skillet, >Add 1 chopped onion, some salt and cook for 5 min, add 1 tsp garam masala, 1 tsp curry powder, 1 tsp turmeric. >Add 1 tbsp grated ginger, 2 minced garlic cloves and mix for 30 seconds. >Add 1 red pepper and 1 green pepper sliced into strips, 1 chili pepper and 3 carrots and cook for another 5 minutes. >Add 1 14 oz can coconut milk, 1/2 cup water, 1 tsp coconut sugar. Let simmer for 10 min. or until soft. >Then remove from heat and flavor with 1 tbsp soy sauce, 2 tsp rice vinegar or lime juice. >Divide curry into bowls with jasmine rice, and garnish with your choice of chopped fresh parsley, cilantro, basil, mint, sriracha... 🍚Brown Jasmine Rice- According to package directions to be served with curry. 🥩Wine and Rosemary Marinated Beef from kosher.com Wine mixture: 3 tbsp red wine, 3 tbsp soy sauce, 1 tsp sugar. Mix with 2 lbs chuck steak, cut into even cubes. Marinate for 3- 12 hours. Prep vegetables to thread onto skewers: onion, pearl onion, pepper, mushroom, zucchini... Any and all works! Add 2 rosemary sprigs onto each skewer, pushed between the meat and vegetables. It adds tremendous flavor. Bake at 400 degrees, 10-12 minutes on each side. 🥧Chocolate Kokosh Cake Call your mom or grandma :) or use the "Purple Cookbook" Spice and Spirit page 381 recipe. Many bloggers have recipes too.

    Kombucha Mule Recipe per cup: 1 oz. vodka 2 oz. kombucha 1/2 oz. lime juice 1/2 oz. simple syrup Ice Mix all the ingredients together, shake or stir with ice, garnish with mint. Sumac Onion Challah Buns Great and easy method, by King Arthur Flour. Dill Caper Dip @kaila fine basil and babka 4 cloves garlic, 1/2 bunch of fresh dill, 2 heaping tbsp capers, 2 tbsp vinegar, 2 tbsp olive oil, salt and pepper + big dollop whole grain or dijon mustard. Miso Tilapia with Shiitake Levana Kirshenbaum -The Whole Foods Book  page 129 Artichoke and White Bean Dip Blend 1 head roasted garlic, 1 bag frozen artichoke, 1 can white beans, 2 tbsp lemon juice, 1/2 cup olive oil, salt, pepper and red pepper flakes. Summer Farro Salad Looks magnificent!!!!! Salad: Cooked farro mixed greens 2 peaches, sliced blueberries grape tomatoes fresh chopped basil Dressing: 1/3 cup olive oil 2 tbsp lemon juice 1 tbsp balsamic vinegar 2 cloves garlic 1 small shallot salt and pepper Blend well. Lime Chimichurri Grilled Chicken Blend 2 cups parsley, 3 garlic cloves,  2 tablespoons fresh lime juice and 1 teaspoon red chile flakes, slowly stream in 3 tablespoons oil, until combined. Spread the chimichurri over whole chicken cut in 8. Keep basting as it grills. The grilling time varies, but if you have a thermometer, it is ready between 155 and 165 degrees. Southern Fried Green Tomatoes Carrot Kugel with Corn Flake Crunch @mom's recipe 2 lbs carrots, steamed or boiled 1/4 cup maple syrup or agave 1/4 cup flour or almond flour 4 large eggs 1/2 cup oil 1 tsp baking powder Sprinkle of cinnamon, nutmeg and vanilla extract. Blend, add optional topping, and bake in 8" square pan, or 9" round pan at 350 for 45 min - 1 hour. Topping (optional): 2 tbsp oil, 1/4 cup brown sugar, 2 cups corn flakes.     8.10.2018 We are honored to have the Menu Planned and Executed by Ran. Ran is a Jerusalem born + raised foodie, with a Moroccan Mama like me :) Aperol Spritz (Italian cocktail that is the hottest of the summer) Montreal Bagel Challah (!!!!) 1 1/2 cups warm water 5 tablespoons granulated sugar 3 tablespoons canola oil 8 grams active dry yeast 1 large egg 1 tablespoon maple syrup 4-4 1/2 (630g) cups all purpose, unbleached flour 1 teaspoon salt 3/4 cup poppy seeds or sesame seeds 16 cups of water 1/3 cup honey Make dough with water, sugar, oil, yeast, egg, maple syrup, flour and salt. Shape into 3-braided Challahs, let rise for 20 minutes. Boil a large pot of 16 cups of water + 1/3 cup honey. Drop in the challahs and boil for 1 minute on each side, drain. Whisk 1 egg, and prepare seeds in a separate bowl. Dip the challah into the egg, and then press both sides of challah into the seeds. Bake at 425 for 15-18 minutes Basil Jalapeno Dip Do you remember, back in September 2017, I was all into the Cilantro Jalapeno Dip? @Elisa told me to try it with basil, and she nailed it!! ‎Cilantro or Basil Jalapeno Dip Blend: 4 jalapenos, 2 cups cilantro or Basil, 3/4 cups mayo, 1/4 cup oil, 2 garlic cloves, juice of 1 lime, 1 tsp salt. Separate the cloves, and add straight into challah dough, with 1-2 tsp. chopped fresh rosemary. Vegetarian chopped liver 1/2 lb lentils, cooked 2 cups chopped onions, sautéed 6 hard boiled eggs, chopped small 2 tbsp almond butter Salt and pepper Mix all the components together. Kale Caesar Salad Baby kale Pickled red onions Chopped avocado Toasted bread or bagel cubes for croutons Dressing: 1/2 cup mayo 1/4 cup water 3 garlic cloves 1/4 cup lemon or apple cider vinegar 1 tsp salt Beet, pickle and horseradish salad Cook 8 beets in boiling water until tender. Cool and peel.Thinly slice beets. Combine with dill pickles and 1 chopped onion in a bowl. To dress drizzle of olive oil, a big spoon of horseradish, salt and pepper. Tuna Ceviche with Mango + Lime Cut the tuna into 1/2-inch dice. Peel the mangoes and cut them into the same size dice. Place them in a glass bowl, add chopped chiles, chopped fresh cilantro, chopped red onion, olive oil, lime juice, salt and pepper and toss them until thoroughly mixed. Cover with plastic wrap and marinate in the refrigerator for 30 minutes, or until "done" to your taste. Taste and add more seasoning if needed.
